Behind the Roast - What does Freshly Roasted actually mean?

Coffee is Seasonal & Alive!
Coffee starts as a seed inside a cherry.
After processing and shipping, we receive it as green beans. Green beans are stable.
But once we roast them? Everything changes. Roasting wakes the coffee up.
Heat transforms sugars. Aromas develop. Carbon dioxide forms inside the bean.
From that moment, the clock starts ticking.
Here’s the interesting part:
Coffee actually needs a short rest after roasting.
For most coffees, the sweet spot for this resting period is
- 3-10 days after roast for espresso
- 2-7 days for filter & soft brew methods
Why? Because freshly roasted beans release CO₂ (called degassing).
Too fresh, and your brew can taste sharp or unbalanced.
Fresh = rested properly, not rushed.
Why Supermarket Coffee Tastes Flat
Mass-produced coffee is often:
- Roasted months ago
- Stored in warehouses
- Sitting on shelves long before you buy it
By then, most of the aromatics are gone.
What you’re tasting isn’t “bad coffee” —
it’s tired coffee.
What Freshly Roasted Means at Chiasso
For us, freshly roasted means:
- Roasted in small batches
- Packed soon after roasting
- Date clearly
- Sent out at peak flavour
How to Keep It Fresh at Home
- Keep beans whole (grind just before brewing)
- Store in a cool, dry place
- Avoid the fridge (moisture in the enemy)
- Use within 3-4 weeks for best flavour
